Description

Ina Garten’s Arrabbiata Sauce is a spicy Italian tomato sauce made with crushed tomatoes, garlic, red pepper flakes, and fresh herbs. The name “arrabbiata” translates to “angry” in Italian, which refers to the heat from the red pepper flakes that gives this sauce its signature kick. This sauce is perfect for anyone who enjoys bold, spicy flavors and is incredibly versatile in the kitchen.

Ingredients

Scale
  • 1/4 cup good olive oil
  • 6 cloves garlic, thinly sliced
  • 1 teaspoon crushed red pepper flakes (adjust to taste)
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon sugar (optional, to balance acidity)
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh parsley leaves
  • Freshly grated Parmesan cheese, for serving (optional)

Instructions

  • Heat the olive oil: In a large skillet or saucepan, heat the olive oil over medium heat.
  • Sauté the garlic: Add the thinly sliced garlic to the hot oil and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the red pepper flakes: Stir in the crushed red pepper flakes and cook for another 30 seconds to infuse the oil with spice.
  • Incorporate the tomatoes: Pour in the crushed tomatoes, and add the kosher salt, black pepper, and sugar (if using). Stir well to combine.
  • Simmer the sauce: Reduce the heat to low and let the sauce simmer uncovered for 20-25 minutes, stirring occasionally, until it thickens slightly.
  • Finish with herbs: Stir in the chopped basil and parsley, and adjust the seasoning if necessary.
  • Serve: Toss the Arrabbiata Sauce with your favorite pasta, or use it as a spicy topping for pizza or roasted vegetables. Top with freshly grated Parmesan cheese if desired.
