Description

Ina Garten’s Roasted Cherry Tomatoes are a delightful and easy dish made by roasting cherry tomatoes with olive oil, garlic, and fresh herbs. The roasting process concentrates the tomatoes’ natural sugars, resulting in a sweet, slightly caramelized flavor that’s incredibly versatile. This dish can be served warm as a side, mixed into salads, or used as a flavorful topping.

Ingredients

Scale
  • 2 pints cherry tomatoes, halved
  • 3 tablespoons good olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh basil leaves, torn

Instructions

  • Preheat the oven: Set your oven to 400°F (200°C).
  • Prepare the tomatoes: In a mixing bowl, toss the halved cherry tomatoes with olive oil, salt, pepper, and minced garlic until evenly coated.
  • Roast the tomatoes: Spread the tomatoes in a single layer on a baking sheet, cut side up. Roast in the preheated oven for 15-20 minutes, or until the tomatoes are soft and slightly caramelized.
  • Add balsamic vinegar: Remove the tomatoes from the oven and drizzle them with balsamic vinegar. Stir gently to coat the tomatoes.
  • Finish with basil: Sprinkle the torn basil leaves over the roasted tomatoes just before serving.
  • Serve: Enjoy the roasted cherry tomatoes warm as a side dish, toss them with pasta, or use them as a topping for bruschetta or salads.
