- 1/4 cup red wine (optional)
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh parsley leaves
- Salt and freshly ground black pepper to taste
- 1/2 cup freshly grated Parmesan cheese, for serving

- Sauté the vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté for about 10 minutes until the vegetables are softened.
- Add garlic and turkey: Stir in the minced garlic and cook for another minute until fragrant. Add the ground turkey, breaking it up with a wooden spoon, and cook until browned, about 5-7 minutes.
- Incorporate tomatoes and wine: Stir in the crushed tomatoes, tomato paste, and red wine (if using). Bring the mixture to a simmer.
- Season and simmer: Add the dried oregano, red pepper flakes, salt, and pepper. Lower the heat and let the sauce simmer uncovered for 30-40 minutes, stirring occasionally, until thickened.
- Finish with herbs: Stir in the chopped basil and parsley, adjusting seasoning to taste.
