- 1 lemon, halved
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- 1/2 cup chicken broth or water
Instructions
- Prepare the Artichokes: Trim the tops and stems of the artichokes, then snip the sharp tips of the leaves. Rub with lemon to prevent browning.
- Remove the Choke: Open the center leaves and use a spoon to scoop out the fuzzy choke.
- Make the Filling: In a bowl, combine breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper. Drizzle with olive oil and mix until well combined.
- Stuff the Artichokes: Fill each artichoke with the breadcrumb mixture, making sure to get some filling between the leaves.
- Prepare for Baking: Place the stuffed artichokes in a baking dish and drizzle with olive oil. Pour chicken broth or water into the dish.
- Bake the Artichokes: Cover with aluminum foil and bake at 375°F (190°C) for 45-50 minutes, or until the leaves are tender and the filling is golden brown.
